Dark Chocolate Cookies with White and Dark Chocolate Chunks

Ingredients

  • 100 g butter
  • 100 g white sugar
  • 75 g brown sugar
  • 1 egg
  • 1½–2 tsp vanilla extract
  • 115 g flour
  • 40 g cocoa powder
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • Pinch of salt
  • 100–150 g white chocolate chips
  • 50 g dark chocolate, chopped

Method

  1. Preheat the oven to 160°C.
  2. Cream the 100 g butter, 100 g white sugar and 75 g brown sugar together until light and fluffy.
  3. Beat in the egg, then mix in the 1½–2 tsp vanilla extract.
  4. Add the 115 g flour, 40 g cocoa powder, ½ tsp baking soda, ¼ tsp baking powder and pinch of salt. Mix until just a few faint streaks of flour remain.
  5. Add the 100–150 g white chocolate chips and 50 g chopped dark chocolate, then mix until incorporated.
  6. Scoop the dough onto a baking tray.
  7. Bake at 160°C for 12–15 minutes.
